Brunswick Stew

A hearty Southern stew with pulled pork, chicken, corn, beans, and tomatoes. Originally made with squirrel!

Ingredients

  • 2 lbs pork shoulder (cubed)
  • 2 lbs chicken thighs (bone-in)
  • 2 cans diced tomatoes (14 oz each)
  • 2 cups frozen corn
  • 2 cups frozen lima beans
  • 2 cups chicken broth
  • 1 large onion (diced)
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tsp liquid smoke

Instructions

  1. Season pork and chicken with salt and pepper.
  2. Place all meats in a large Dutch oven or stockpot.
  3. Add tomatoes, broth, and onion.
  4. Bring to a boil, then reduce to a simmer.
  5. Cook 2 hours until meats are very tender.
  6. Remove chicken, shred meat, discard bones. Add back to pot.
  7. Shred or chop the pork.
  8. Add corn, limas, ketchup, vinegar, Worcestershire, brown sugar, and liquid smoke.
  9. Simmer 1 more hour until thick and flavors meld.
  10. Season with salt and pepper.
  11. Serve with cornbread or saltine crackers.

💡 Tips & Notes

Every Southern family has their own recipe! Some add BBQ sauce, potatoes, or okra. It should be thick - almost like a thick stew, not a soup.
