Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 cup light corn syrup
  • 1 cup sugar
  • 3 eggs
  • 2 tbsp butter (melted)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1.5 cups pecan halves

Instructions

  1. Preheat oven to 350°F.
  2. Place pie crust in a 9-inch pie pan. Crimp edges decoratively.
  3. Whisk together corn syrup, sugar, eggs, melted butter, vanilla, and salt.
  4. Spread pecans evenly in the bottom of the pie crust.
  5. Pour filling over pecans. They will float to the top.
  6. Arrange pecans in a nice pattern if desired.
  7. Bake 50-55 minutes until set. The center should jiggle slightly.
  8. Cool completely before cutting (at least 2 hours).
  9. Serve with whipped cream or vanilla ice cream.

💡 Tips & Notes

Don't overbake or the filling will be too firm. It continues to set as it cools. For a boozy version, add 2 tablespoons bourbon to the filling.
