Sausage Gravy

Rich, peppery sausage gravy for smothering biscuits. A stick-to-your-ribs breakfast that'll get you through the morning.

🍳 Breakfast Prep: 5 minutes Cook: 15 minutes Servings: 6

Ingredients

  • 1 lb breakfast sausage (regular or hot)
  • 1/4 cup flour
  • 2.5 cups whole milk
  • 1 tsp black pepper (or more to taste)
  • 1/2 tsp salt
  • pinch cayenne (optional)

Instructions

  1. Cook sausage in a large skillet over medium heat, breaking into crumbles.
  2. Cook until browned and no pink remains, about 8 minutes.
  3. Don't drain the drippings - that's the flavor!
  4. Sprinkle flour over sausage and stir to coat.
  5. Cook 1-2 minutes, stirring constantly.
  6. Slowly pour in milk, whisking to prevent lumps.
  7. Cook until gravy thickens, about 5 minutes.
  8. Season with salt, pepper, and cayenne.
  9. If too thick, add more milk. Too thin, cook longer.
  10. Serve immediately over hot biscuits.

💡 Tips & Notes

Don't skimp on the black pepper - that's what makes it "sawmill" style! Jimmy Dean or Tennessee Pride sausage both work great.
